If desired, add the wine (optional) and continue cooking until liquid has reduced by half, set aside. Remove the lasagna’s freezer wrappings, cover the top with new foil and bake for 60-70 minutes, or until heated through (a thermometer inserted in the center should read 165°). Remove the foil and bake the lasagna for 10 more minutes or so to brown the top.

Bake the lasagna for 25 minutes with the foil kept on, then remove the foil and bake for another 25 minutes until hot and bubbly. You know dinner is a “go” when the internal temperature of the lasagna reaches 165 degrees. Typical lasagna recipes, made in a 9- by-13-inch baking pan, serve approximately 12 to 14 people. Lasagna can be prepared in advance and refrigerated or frozen. Bake refrigerated lasagna for an additional 30 minutes. Defrost frozen lasagna in the refrigerator for 24 hours, and add 40 minutes to the original baking time. Preheat oven to 375º. You can substitute ricotta cheese for the cottage cheese. Ricotta is drier in texture than cottage cheese.
